Professor John Edwards from BU's Tourism School has featured in two publications discussing his team's research into hospital food.
Last year experts from the Foodservice and Applied Nutrition Research Group led by Professor Edwards examined the quality of food served to inmates and to hospital patients and concluded those in hospital are losing out on essential nutrients.
